Filling out a pre-intereview sheet for a birth certificate from Fairview Southdale Hospital in, that's right, Edina, it asks me what color I am.
Huh? Light beige? Are they still allowed to ask that question?

Does it actually ask what color you are, or does it ask for a race?
Either way, you don't have to answer it. They are just doing it for their own data. It isn't on the birth certificate and hasn't been in decades. It is just the baby's name, birthday, place of birth, and sex and mom and dad's names and birthdates.
Don't answer, especially if they actually ask what color you are.
